Here is a yummy recipe for grilled pizza that my whole family LOVES! You can switch out the BBQ sauce and chicken with your favorite sauce and toppings!
Ingredients:
- 16oz Pizza Dough (available in the deli section of your supermarket)
- 18oz BBQ Sauce
- 8oz Grilled Chicken Breast
- 8oz Mushrooms, sliced
- 1 Medium Onion, diced
- 6oz Shredded Cheddar Cheese
- 6oz Shredded Mozzarella Cheese
- Olive Oil, as needed
- All Purpose Flour, as needed
- Salt & Pepper, to taste
Directions:
- Preheat grill to 400F.
- Divide dough in half and roll out with rolling pin to 1/4 inch thickness. Dust work surface with the flour so dough does not stick to table. Dough does not have to be perfectly round.
- Repeat above with the other half of dough.
- Brush one side of each dough with the olive oil. Spread dough on grill, oil side down.
- Cook for 1 minute then rotate each dough 90 degrees. Brush the top of the dough with more olive oil.
- Cook for 1 minute, flip dough over.
- Cook for 1 minute, remove dough from grill. Turn off grill.
- Heat a large sauté pan over medium heat.
- Add 1 tbsp of olive oil, the mushrooms and the onions.
- Cook for 5 minutes stirring often. Onions should be soft and translucent. Season with salt and pepper.
- Drain and set aside.
- Cut the chicken breast in half and slice into 1/4 inch strips.
- Preheat oven to 400F.
- Place each dough on a baking pan and begin assembling the pizzas by spreading an even layer of BBQ sauce on each grilled dough.
- Evenly spread the cheddar cheese and mozzarella cheese on each dough.
- Evenly spread the onion and mushroom mixture on each dough.
- Evenly spread the sliced chicken on each dough.
- Place fully assembled pizzas in the oven and bake for 5-7 minutes or until cheese is fully melted.
- Remove pizzas from oven and let rest for 1 minute before slicing.
- Serve hot and enjoy!
