Kid-Friendly Baked Crispy Chicken Ranch Taquitos

A twist on Taco Tuesday!

Change up Taco Tuesday, or any other meal, with these yummy and easy taquitos and make everyone happy!

What you need:

  • 2 cups cooked chicken, shredded or diced (you can even cheat a little and use rotisserie chicken)
  • 1 cup shredded cheese (I use cheddar or Mexican blend)
  • 1 packet ranch seasoning (I buy the large bulk container because, yum!)
  • 8 to 10 flour tortillas
  • Cooking spray or oil
  • Optional: drained, rinsed corn, drained, rinsed, black beans, diced onions, diced bell peppers, diced tomatoes, cilantro, spinach, and if you want to spice things up a bit, add taco seasoning to the chicken

What you do:

  1. Preheat oven to 400'. Spray baking sheet with cooking spray or spread with a little oil.
  2. In a bowl, combine chicken, cheese, and ranch seasoning. (Add optional ingredients, if using.)
  3. Spoon mixture into tortillas and roll up.
  4. Place seam-side down on baking sheet.
  5. Spray taquitos with cooking spray or brush a little oil on them.
  6. Bake for 20-25 minutes, until desired crispiness.

Serve with salsa, guacamole, and/or sour cream.
