Easy Slow Cooker Loaded Potato Soup
What you need:
- 32 oz bag frozen diced potatoes (use shredded frozen hashbrowns in you prefer it creamier)
- 1 oz packet ranch seasoning
- 32 oz chicken broth
- 2 10.5 oz cans cream of chicken soup
- 8 oz cream cheese, room temperature
- 16 oz bag shredded cheddar cheese (save some for topping)
- ½ cup bacon bits (save half for topping)
- Garlic powder
- Onion powder
- Pepper
- Sour cream (if desired)
- Green onions (if desired)
What you do:
- Add frozen potatoes, garlic powder, onion powder, pepper, ranch seasoning, chicken broth, cream of chicken soup, and bacon to the slow cooker and mix.
- Cook on low for 5-6 hours or high for 3 hours. The potatoes should be tender when poked with a fork.
- Mix in 1 cup of shredded cheddar cheese and cream cheese (cubed). Cover and cook on high for another 30-45 minutes, until the cheese has melted, stirring occasionally. Taste and see if you would like additional seasonings added.
- To serve, top with cheese, bacon bits, green onion, and sour cream, if desired.
