Carne Asada in the Slow Cooker

Make taco night even easier!

While I enjoy cooking, I also like easy meals so I use my slow cooker often. This allows me to toss it all into the slow cooker in the morning while the kids are eating breakfast, turn it on low, and allow it to cook all day while I'm working. Figured I would try my Carne Asada recipe in the slow cooker today and it was amazing! 

What you need:

  • Beef flap meat, skirt or flank steak, or even a London broil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cloves of garlic, crushed OR 1/2 to 1 teaspoon of garlic powder
  • 1/2 to 1 teaspoon onion powder
  • 1/2 cup orange juice
  • 1/4 cup Lime juice
  • 1 cup fresh cilantro, chopped (optional)
  • 2 tablespoons white vinegar

What you do:

  1. Add all ingredients except for the meat to a gallon sized zipper bag. Squeeze it to mix ingredients.
  2. Add steak to the marinade in the bag, zip up and refrigerate. I refrigerate it overnight, but an hour or two will work as well.
  3. To cook, remove the steak from the bag and place into the slow cooker. I added about 1/4 cup of the marinade to the slow cooker as well. 
  4. Cook on low for 8 hours.

We use Carne Asade to make yummy soft tacos or fajitas. To do this, you will need (choose what your family likes):

  • Flour tortillas
  • Shredded cheddar cheese
  • Black beans (we love refried black beans)
  • Salsa
  • Guacamole
  • Sour cream
  • Sliced and sauteed peppers and onions
