No-Bake Peanut Butter, Oatmeal and Chocolate Chip Energy Balls

As a mom, I'm always on the hunt for healthy treats. My kids love to snack and enjoy treats, of course, and I prefer for them to have something a little healthier, whenever possible. This treat covers those bases for me! Plus they are quick - I made a batch of 20 balls in about 10 minutes. Perfect for summer snacks and lunch boxes too!

What you need:

  • 1 1/2 cups oats
  • 1/3 cup honey
  • 1/2 cup peanut butter 
  • 1/4 cup chocolate chips
  • 1/2 teaspoon vanilla

What you do:

  1. Add all ingredients to a medium bowl and mix well until well combined.
  2. Roll mixture into 1 to 2-inch-sized balls and place on a plate or baking sheet.
  3. Refrigerate for 20 minutes to firm them up.
  4. Watch them disappear! 
  5. They will store well, sealed, in the refrigerator, if you have any leftovers.
