Pineapple Chicken in the Slow Cooker

Oh, my! Walking into the house after this has been in the slow cooker for a few hours totally makes your stomach growl! It seriously smells amazing! 

What you need:
1½ cups pineapple juice
½ cup chicken broth
3 tablespoons soy sauce
2 teaspoons garlic powder or 2 cloves minced garlic
¼ cup packed brown sugar
Chicken breasts or thighs, boneless, skinless (I use 4 to 5 chicken breasts)
2½ cups fresh pineapple (you can sub one 20 oz. can of pineapple chunks with the juice and decrease the pineapple juice to just 1 cup)
2 tablespoons cornstarch
¼ cup water
1 teaspoon sesame seeds (optional)

What you do: 
1. Add the pineapple juice, chicken broth, soy sauce, garlic and brown sugar to the slow cooker and mix well.

2. Add the chicken and pineapple. 

3. Cover and cook on low for about 4½ hours or high for 2 to 2½ hours.

4. Towards the end of the first cooking time, in a small bowl, whisk together the water and cornstarch. Stir into the slow cooker, cover and cook on high for an additional 30 minutes or until sauce is desired thickness.

5. Serve the chicken and pineapple, sprinkled with sesame seeds, if desired. We serve it over rice with a side of broccoli.
