Spring Sugar Cookies

Here is a great sugar cookie that uses some whole wheat flour to make it a little better for you. This dough works best with large cookie cutters. We used spring shapes like flowers and butterflies!

Sift together and set aside:

  • 1 cup unbleached white flour
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp salt

Cream until softened (using mixer):

  • 2/3 cup butter or margarine
  • 1 tsp  vanilla

Add gradually, creaming until fluffy after each addition:

  • 3/4 cup sugar

Add in halves, beating thoroughly after each addition:

  • 1 egg, well beaten

Gradually stir in dry ingredients and blend well. Chill thoroughly in refrigerator. Lightly grease cookie sheets.
Roll dough 1/8 in. thick on lightly floured surface. Cut dough with a large, floured cookie cutter. Sprinkle tops of cookies with colored sugar.

Bake at 375 degrees for 10 to 12 minutes. Remove immediately from pan. Place on rack to cool.
