Easy Tamale Casserole - Vegetarian!

Kid-friendly and easy dinner!

I made this the other day thinking it would be more of a hearty side dish, but it was great as a stand-alone dinner! And it was YUMMY!! And, bonus? My dad, who is a meat and potatoes guy, didn't even notice there wasn't any meat in it.

Vegetarian Tamale Casserole

Ingredients:

  • 1 can of corn, drained
  • 1 can of kidney beans, drained
  • 1 can of black beans, drained
  • 2 cups of shredded cheddar cheese
  • 1 TBSP chili powder
  • 1 package of cornbread mix, prepared according to directions

Directions:

  1. Preheat oven to 350' and grease a casserole dish.
  2. In a large bowl, mix the corn, beans, cheese, and chili powder together. 
  3. Put into greased casserole dish. 
  4. Prepare cornbread mix following the directions.
  5. Spread prepared cornbread mix over the top of filling in casserole dish. 
  6. Bake at 350' for 35-45 minutes (until cornbread is done). 
  7. Serve hot. Enjoy!
