This is one of my family's favorite dinners! It's easy to put together and yummy once it's done!
What you need:
- Boneless Chicken (we use skinless breasts)
- 2 Cups of Brown Rice (you can use white rice if you prefer - takes a little less time to cook and a little less liquid)
- 1 Can of Cream of Chicken Soup
- 1 Can of Chicken Broth
- 3 Cups of Water
Mix together the cream of chicken soup, chicken broth, and water and pour into a casserole dish with the rice. Stir with a fork and then add the chicken. Bake at 350° covered with foil for 1 to 1.5 hours. The brown rice will take closer to the 1.5 hours. Be sure to check the liquid at about 45 minutes. You want it to absorb most of the liquid, but don't want it dry. Add a little hot water if it looks like the rice is cooking too fast. Towards the end of the cooking time remove the foil.
You can also make this in your crock pot. It cooks in about 2.5 to 3 hours on high.
