Apple Cinnamon Pancakes

APPLE CINNAMON PANCAKES

   1 cup all-purpose flour ( I use whole wheat)
   1 teaspoon baking powder
   1/2 teaspoon baking soda
   1/4 teaspoon salt
   2 tablespoons sugar
   2 teaspoons cinnamon
   1 egg lightly beaten
   1 cup nonfat buttermilk
   1 tablespoon vegetable oil
   1 apple.  Skin and cut out seeds. Dice in very small chunks.
   Vegetable cooking spray

Combine first 6 ingredients in large bowl; make a well in center of mixture. Combine egg, buttermilk and oil, and add to dry ingredients; stir just until dry ingredients are moistened. Add apples & stir.(Note) Add a little buttermilk if too stiff.
Coat a nonstick griddle with cooking spray and preheat to 350 degrees. Add 1/4 cup of batter to make each pancake.
