Easy Cheesy Chicken Soup

We all love cooking in our household, but sometimes we want to make something quick and easy that isn't going to take a lot of prep work to get it on the table. You can even toss it all into a slow cooker if you want. Plus, you can change it up for various tastes quite easily as well.

Easy Cheesy Chicken Chili

Ingredients:

  • 3 cooked and shredded chicken breasts (to make it super easy, I use rotisserie chicken - you can also use 2 large cans of white chicken)
  • 2 cans of beans, drained - your choice - I recommend cannellini beans and/or kidney beans or navy beans (mom tip: if you have a picky eater or one who says they don't like beans, go for the cannellini - they won't even notice them)
  • 2 10.5 oz cans cream of chicken soup
  • 1 10 oz can of Rotel tomatoes (use whatever type your family would prefer - mild, hot, or extra hot) OR sub your favorite salsa
  • 2 15.25 oz cans of corn, drained
  • 2 soup cans of water (you can use chicken broth, if you prefer)
  • 16 oz Velveeta cheese, cubed for easier melting (can sub 16 oz cream cheese)
  • Optional: can of hominy, drained, red and/or green peppers, diced (add the hominy or peppers while cooking), tortilla strips or chips, shredded cheese, guacamole, sour cream, jalapeño, red pepper flakes

Directions:

  1. Add all ingredients to a large pot and stir over low. Stir frequently to avoid the cheese burning on bottom of the pan until cheese has melted and it's hot

Make it thicker (using less added water) if you would like to serve it as a filling dip instead.
